Why don't you share the name of your super builder. If he has made over 100 amps, he has nothing to hide.

Probably the best way to settle this design question is to build the 2A3 amps with the respective output transformers, and hear them yourself. Go with the one that sounds better to you. On the technical side, if you look at the plate curves of the 2A3 tube, linearity of the curves extends over a huge range. You can operate the tube linearly in any part of these curves. The range you pick depends on your design, and your objective. For a person to steadfastly say that only one region is good, is to misunderstand the operation of the tube.
