The role of a software synthesizer in d-to-a conversion

I read that midi uses software synthesizers. This means that what we hear is the recorded sounds on the wavetable of the synthesizer used. This opens up possibility of using better tables for better sound.

But I was unable to find whether some kind of synthesizer is also used to reproduce sounds from the lossy or lossless music files that we hear. If thats the case, we can improve sound by using better tables.

Has anyone tinkered with this?
