A small help from South Indians

we enjoy food cooked in mustard oil . didn't know the same was restricted for cooking use in the US on account of some acid it contains.
 
It’s the smell….it has some pungency _wasabi , horseradish ..just a drizzle of the cold pressed raw oil in salads adds the depth of pungent , nutty flavour …cooking tempers the pungency but it can still be tasted in fish , meat etc …
