I think it would be useful to put one or two lines as to why a particular blu ray is a must have in ones collection. picture quality, dark scenes audio/surround effects etc.

By default every blu ray is supposed to have best picture quality and audio effects so it would be useful to highlight the USP.

Many of my favorite blu rays are already mentioned but one series which really impressed me in some of the scenes for great LFE and surround effect is:

Resident Evil series - glass shattering scene and crow scene I could remember among others

My favorites -
1. Skyfall - great night scenes to test black levels. Awesome sound - i almost heard my Klipsch croak when the train falls into the subway tunnel.
2. The dark knight - great movie, great sound, great dark scenes
3. MI-Ghost Protocol - loved the visuals - Europe, deserts, Burj. Sound is awesome too - gunshots in the opening scene, explosions. Great disc to own
4. XMen - Days of future past. The sound!!!
5. The Conjuring - if you watch it, you must watch it on blu ray.

Just re-quoting my own with reasons this time

My must have's on blu ray discs (In preferred order)

Cars
Titanic
Bourne Ultimatum
Dark Knight
Up in the air

Cars - Animated films are all good I know but this one is very special for HT demo purposes. The sharpness and for what 1080p can really do to the tiniest of details handling countryside warm landscapes along with city side racing sequences in night (opening race) as well as day time (climax race) with precision.

Titanic - The 2D mode of 3D blu ray - specifically for the full screen IMAX impact of the most gorgeous looking ship and film ever made. Spread over 2 Blu ray discs (+90GB for one film) , this is clearly a benchmark of how remastering of older film needs to be done.

Bourne Ultimatum: Not having gorgeous colours but professionally graded in cold blue hues, the relentless non stop action combined with intentionally shaky camera work throughtout the film puts your display system to test for fast paced scenes and still capturing 100% 1080p focus ensuring u never find a single unfocussed shot.

The Dark Knight: The full screen IMAX shots which open up between the regular widescreen scenes along with a deafening dolby true HD audio track. What else- this one is popular enough in all demo rooms to need any input.

Up in the air: The film Grain. This movie will not cover 100% of your screen but only 90% being in 1.85:1 ratio. Despite coloured gorgeously it has great amount of film grain to deliver a great cinematic look. There are many aerial shots of popular american cities and the shift in focus between these shots and closeups is quite a learning experience in how to find the perfect balance for calibrating your display.

My picks:
1. LOTR & The Hobbit Series: Beautiful landscapes and amazing visuals+sounds. The hobbit has been shot at 48fps and that is reflected in the picture.
2. The Batman Series: Christopher Nolan. Hans Zimmer. 'nuff said.
3. Inception: Hans Zimmer again and the Christopher Nolan. The last part at the snow clad mountains is just wow!
4. James Bond movies featuring Daniel Craig: The chase sequence in Casino Royale or in Quantum of Solace or the fight scene on top of the train in Skyfall, beautiful effects.
5. The Conjuring: Oh the surround sound effects. Watch it at night with lights out. You'll be jumpy for sure!
6. King Kong by Peter Jackson. Beautiful visuals and good effects.
7. Harry Potter series.

Few must have movies I can think of:

Avatar
Pacific rim
Tron legacy
Planet earth series
Inception
Wizard of oz (the 2013 version)
