Note:
1. This is not well planned purchase and build. Based on available gadgets I tried to build this system as complete as possible for my usage.
2. I have a 5.1.2 Home theatre system with TV which is a work in progress.

Did you try using the HDMI extractor with the fire stick?
My guess would be that it (HDMI-> TOSLINK-> DAC -> Amp) will yield a better experience than streaming audio via BT

Yes, I tried almost all combination of these gadgets for an year (slowly built over an year). Tried running a HDMI cable / Coax cable from Projector side to AV Rack side. I did not hear anything significant improvement. Audio Sync is also very good with Firestick bluetooth. Since there is no significant quality gain and having no audio sync issue, settled with this neat setup without cable running in between (rental house).
 
In my experience, raspberry pie's USB audio output is not very refined. Please plan on getting a HAT (allo or something else) for your Pie, as your next upgrade :)

Yes, true. Upgrade plan depends on my usage. Now I use RPi MPD FLAC streaming only during broadband outage - which is not often.
